Choosing Quality Lamb
Selecting good lamb begins with understanding a few important quality indicators.

Sourcing is another factor. Purchasing from a trusted butcher can provide better assurance of freshness and origin. Fresh lamb should smell mild and slightly sweet, without any strong or unpleasant odor.
Grass-fed lamb usually delivers a more pronounced, earthy flavor and tends to be leaner, while grain-fed lamb often has a milder taste and slightly higher fat content.
Preparing and Searing the Lamb
Begin by removing the lamb chops from refrigeration about 20 minutes before cooking. Place them on paper towels to remove excess moisture, then season generously with salt and freshly ground black pepper.
Heat a cast iron skillet over medium-high heat and add a small amount of olive oil. Once the oil is hot but not smoking, place the chops in the pan, starting with the fatty edge. Hold them upright using tongs so the fat renders and becomes crisp, which takes about 3 to 4 minutes.
After the fat has rendered, lay the chops flat in the pan and sear for approximately 3 minutes until a golden crust forms. Turn and repeat on the other side until evenly browned and cooked to your preferred doneness.
Garlic Butter Finishing Technique
Once the lamb is nearly finished, turn off the heat and carefully remove excess rendered fat from the pan, leaving just a small amount behind for flavor.
Add butter to the warm skillet along with finely chopped or grated garlic and fresh rosemary. As the butter melts, stir it gently to combine with the aromatics.
Spoon the garlic-herb butter continuously over the lamb chops, allowing them to absorb the rich flavor. This basting process enhances both aroma and taste, giving the meat a glossy, savory finish.
Transfer the chops to a serving plate and drizzle any remaining butter from the pan over the top.
