For the shells:

Condensed milk: ¼ cup (50 g)
Water: 3 ½ tbsp (50 ml)
Food coloring: purple, pink, yellow, orange (powdered or liquid)
For the filling:
Fresh cream: 1.3 cups (300 ml)
White chocolate: 2.8 oz (80 g)
Condensed milk: 3 tbsp (60 g)
Gelatin sheets: 0.3 oz (8 g)
Instructions
Prepare the Meringue Base: Sift the almond flour and powdered sugar together. Stir in half of the egg whites, then mix in the condensed milk. Set aside.
Make the Sugar Syrup: In a small heavy-bottomed pan, combine granulated sugar and water. Heat on low until the syrup reaches 250°F (121°C).
Whip the Egg Whites: While the syrup heats, whip the remaining egg whites to stiff peaks. Slowly pour in the hot syrup while continuing to whip until the meringue is smooth, glossy, and cooled.
Combine Mixtures: Fold the whipped egg whites into the almond flour mixture in stages, starting with one-third. Mix thoroughly, then add the rest. Beat to achieve a glossy, elastic batter.
Color the Batter: Divide the batter into four bowls and add the desired food coloring gradually until you reach the perfect shade.
Pipe the Macarons: Transfer each colored batter into a pastry bag with a round tip (5/16 inches). Pipe small rounds onto a parchment-lined baking sheet. Let them rest for 20 minutes to form a smooth surface.
Bake: Preheat a convection oven to 320°F (160°C). Bake one tray at a time for about 10 minutes. Keep them in a slightly open oven for 2 more minutes. Let macarons cool on a wire rack.
Prepare the Filling: Soften gelatin in cold water for 5 minutes, then mix with ¼ cup warm cream. Melt the white chocolate in a bain-marie or microwave, then add the cream-gelatin mixture. Whip fresh cream to stiff peaks, add condensed milk, and fold gently into the chocolate mixture. Transfer to a pastry bag.
Assemble: Pipe the filling onto the flat side of one macaron shell and cover gently with another shell. Repeat for all macarons. Refrigerate overnight before serving for best results.
Storage
Unfilled macarons: Store under a glass dome or in a tin for 2–3 days.
Filling: Keep in the refrigerator, covered with plastic wrap, for 1–2 days.
